Zad Al Mosafer should be on your list. It’s located on Lake Qaroun, the owner is super friendly, the rooms are spacious and air conditioned, the food WONDERFUL, and it is just lovely. It’s about 2 1/2 hours from Cairo, and a bit difficult to get to, but they will send a cute man with a fancy car to pick you up and take you back to Cairo for not that much money. Bring books and a deck of cards (they have wine and beer) and just enjoy being in the middle of nowhere. Also, you can ride horses on the beach at sunset. (Trust me on this one: I know it sounds cheesy, but it was one of the most fantastic things ever. So, so much fun.) You can also take a truck to visit the whale bones in the dessert, which I wouldn’t really recommend.
(I don’t remember how much it cost per person, but it was totally affordable and so, so worth it.)
